Ingredients

  • 2 fresh egg yolks
  • 250 g mascarpone
  • 200 g Low-fat quark
  • 2 tbsp honey
  • 1 tsp orange zest
  • 1 fresh egg white
  • 50 g grated white chocolate
  • 250 g chocolate gingerbread
  • 170 ml cold coffee
  • 4 tbsp cocoa powder
  • 120 g cranberries

Instructions

    Beat the egg yolks in a bowl with an electric mixer on high speed until pale and frothy. Fold in spoonfuls of mascarpone, quark, honey, and orange zest. Whip the egg white to stiff peaks and fold into the mixture along with the grated chocolate.

    Crush the gingerbread (without the wafer) in a bowl. Layer about one tablespoon of crushed gingerbread in a dessert glass, drizzle with coffee, then add 2–3 tablespoons of the mascarpone cream. Repeat two more layers, finishing with cream and dusting with cocoa powder. Repeat for the remaining glasses.

    Rinse the cranberries in a sieve, pat dry, and garnish the desserts before serving.
