Ingredients

  • 1 lemon
  • 400 ml water
  • 1 cinnamon stick
  • 1 kg apples (e.g., Boskoop)
  • 2 tbsp whole cane sugar

Instructions

    Squeeze the lemon and add its juice to a large pot with water and the cinnamon stick, then bring to a boil.

    While the liquid is heating, peel, core, and cut the apples into wedges or cubes. Add the apples immediately to the boiling mixture, allow it to come back to a simmer, cover, and cook for about 15 minutes over low heat.

    Remove the cinnamon stick and mash the cooked apples with a potato masher until smooth, if desired.
