Berry Yogurt Ice

The berry yogurt ice from Spoonsparrow is incredibly easy to prepare and a perfect cooling treat for hot summer days.

Ingredients

  • 300 g mixed berries (e.g., strawberries, raspberries, blueberries, blackberries)
  • 0.5 Organic lemon
  • 3 tbsp honey
  • 400 g yogurt (3.5% fat)
  • 150 ml buttermilk

Instructions

    Select and optionally wash the berries, then drain them; set aside 4 tablespoons for garnish. Rinse the lemon hot, dry it, grate its zest, cut in half, and squeeze out the juice. Blend the lemon zest, juice, berries, and honey until smooth.

    Stir in the yogurt and buttermilk, pour the mixture into six portion cups, and place them in the freezer for about 4 hours to firm up. Serve the berry yogurt ice garnished with the reserved berries.
