A festive dessert – perfect for bringing along and snacking.

Ingredients

  • 2 egg yolks
  • 2 tbsp cane sugar
  • 250 g mascarpone
  • 0.5 untreated orange (zest)
  • 1 Egg white
  • 125 g honey gingerbread
  • 0.5 tsp gingerbread spice mix
  • Cinnamon
  • clove powder
  • cardamom powder
  • 125 ml coffee (boiled and cooled)
  • almond flakes

Instructions

    Beat the egg yolks and sugar in a bowl with an electric mixer on high speed until frothy white. Fold in the mascarpone by spoonfuls and stir in the orange zest. Whip the egg white to stiff peaks and fold into the cream. Pulse the gingerbread (remove any oblate if present) in a blender until crumbs, then mix with cinnamon, clove powder, cardamom powder, and gingerbread spice.

    Layer the gingerbread crumbs alternately with the mascarpone cream in glasses. Drizzle 1–2 tbsp of coffee over the crumbs each time before adding the next cream layer. Chill for at least 2 hours in the refrigerator.

    Before serving (on the same day), dust the dessert with a little cinnamon and sprinkle almond flakes on top.
