Berry Tiramisu Cake

Ingredients
- 250 g ladyfinger biscuits
- 200 ml espresso
- 60 ml brandy
- 4 egg yolks
- 80 g sugar
- 0.5 Vanilla pod
- 500 g mascarpone
- 300 ml whipping cream
- 6 sheets gelatin (soaked)
- 300 g Strawberries
- 300 g blueberries

Place a springform ring on a cake pan. Lay half of the ladyfinger biscuits over it. Mix espresso with 3 cl brandy and drizzle half over the biscuits. Beat egg yolks with sugar until frothy, add vanilla flesh and brandy, then whisk over a hot water bath until thick and creamy. Stir mascarpone until smooth.

Whip cream to stiff peaks and fold into the mascarpone mixture. Squeeze out gelatin and melt in a warm pot (do not boil). Add 3 tbsp of mascarpone to the liquid gelatin, stir, then return to the remaining mascarpone mixture. Spread half of the cream over the ladyfingers. Wash, trim, and quarter strawberries; wash blueberries and pat dry.

Distribute half of the berries into the mascarpone cream. Layer with ladyfingers and drizzle remaining espresso mixture. Spread remaining cream on top and scatter remaining berries. Chill for at least 4 hours. Remove springform ring and serve in slices.
