- 4 leaves iceberg lettuce (whole, large)
- 4 handfuls fresh young spinach
- 2 Celery stalks
- best olive oil (cold pressed)
- 1 small dried chili pepper
- Salt
- 200 g Gorgonzola

Wash the iceberg lettuce leaves gently and let them drain well. Wash the spinach and spin dry. Rinse the celery stalks and cut diagonally into wide slices. Crush the chili peppers in a mortar and mix with 8 tbsp olive oil. Season well with salt. Dice the Gorgonzola into small cubes.

Arrange the iceberg lettuce leaves on a plate. Add some of the spinach leaves, celery slices, and Gorgonzola cubes to each leaf. Drizzle 2-3 tbsp olive oil around or over the salad. Serve immediately. Fresh toasted white bread pairs well.
