Ingredients
- 300 g whole milk yogurt
- 4 tbsp fresh mint (chopped)
- fresh mint (for garnish)
- 500 g ground meat
- 1 tsp cumin (ground)
- 4 tbsp flat parsley (chopped)
- 1 pinch chili powder (or cayenne pepper)
- 1 tsp sweet paprika
- 1 egg
- 8 tbsp liquid honey
- Salt
- pepper (ground)
- olive oil (for frying)
Instructions

Knead all ingredients except honey into a mixture for the ground meat skewers. Season with salt and pepper, form elongated rolls, and sear in hot olive oil for about 12 minutes on all sides.

During the last 2 minutes drizzle with honey, splash in 3-4 tbsp water, and briefly caramelize at low heat while stirring.

Meanwhile whisk yogurt with mint and season with salt and pepper. Thread the meat rolls onto skewers, garnish with fresh mint, and serve with the yogurt sauce. Keep the lamb koftas warm when serving.
