Lamb Skewers

Ingredients

  • 6 tbsp Olive oil
  • 1 clove garlic
  • 2 tbsp lemon juice
  • 1 tsp dried thyme
  • 8 lamb cutlets (from the back fillet 60-70g each)
  • 1 long eggplant
  • Salt
  • pepper (ground)
  • 8 long wooden skewers
  • vegetable oil

Instructions

    Pour olive oil into a bowl. Peel and press garlic into it. Add lemon juice and thyme, mix well. Cut lamb cutlets across into strips about 3 cm wide. Add to the garlic oil, stir, cover and marinate.

    Wash and trim eggplant, halve lengthwise, cut into pieces about 2 cm thick. Oil the skewers. Brush eggplant pieces with a little garlic oil and thread them onto the skewers alternating with lamb strips.

    Heat a grill pan and oil it. Sear the skewers over high heat for 1 minute, flip and sear another minute, then cook each side for an additional 3-4 minutes over medium heat, turning occasionally. Remove, season with salt and pepper.
