Ingredients

  • 800 g sugar
  • 1 lime (unprocessed)
  • 1 kg kumquats
  • 1 vanilla pod
  • 3 star anise
  • 2 cloves
  • 1 cardamom pod
  • 500 ml white rum

Instructions

    Boil the sugar with 450 ml water and simmer for about 5 minutes while stirring until the sugar dissolves. Then let cool.

    Wash the lime hot, dry rub it, cut off the peel and squeeze out the juice.

    Steep the kumquats, pat them dry, and cut into eighths. Combine with the split vanilla pod, spices, sugar syrup, rum, lime juice and peel in a carafe and let steep for 4-5 weeks. Wrap with a gift ribbon before giving away.
