Lemon Almonds

Ingredients
- 400 g flour
- 2 tsp Baking powder
- 75 g sugar
- 1 pinch salt
- 2 tsp grated lemon zest
- 3 eggs
- 3 tbsp crème fraîche
- 100 g Soft Butter
- 250 g clarified butter (for frying)
- powdered sugar (for dusting)
Instructions

Mix flour with baking powder, then add sugar, salt, grated lemon zest, eggs and crème fraîche, and combine with the flour.

Spread the butter in small pieces over the mixture and quickly knead into a smooth dough with your hands. Cover and refrigerate for about 45 minutes.

Heat clarified butter in a large pot or deep fryer. Roll out the dough on a floured surface to about 1 cm thickness. Use an almond-shaped cookie cutter (Lemon Almond cutter) to cut out cookies, or cut by hand. Fry portions in the hot fat for about 2–3 minutes until golden brown, turning once halfway through.

Remove the Lemon Almonds and drain them on kitchen paper.

Dust with powdered sugar and serve immediately.
