Coconut Foam Bites

Ingredients
- 4 sheets gelatin
- 7 egg whites (ca. 200 g)
- 400 g sugar
- 20 wafer cookies
- 400 g white couverture chocolate
- 2 tbsp Coconut oil
- 50 g shredded coconut
- 20 g sugar hearts

Soak the gelatin in cold water. Beat the egg whites until creamy but not stiff. Dissolve the sugar with 100 ml water in a saucepan and heat to 120°C. Remove from heat and, while constantly stirring with an electric mixer, pour the hot syrup into the egg whites in a thin stream. Squeeze out excess water from the gelatin and melt it in a small pot. Stir in 2-3 tbsp of the cream and quickly fold it into the remaining mixture. Mix well and chill in the refrigerator for about 40 minutes until airy and spongy.

Fill a piping bag with a large, smooth tip and pipe onto the wafer cookies. If necessary, refrigerate briefly again.

Melt the couverture chocolate with coconut oil and let cool slightly. Place the foam bites on a wire rack and coat them with the chocolate (or dip briefly). Sprinkle shredded coconut and garnish with sugar hearts to set.
