Ingredients

  • 2 kg untreated oranges (yields about 1.2 l juice)
  • 1 cm ginger
  • 500 g gelatine sugar (3:1)
  • 2 star anise
  • 2 cloves of mace
  • 1 cinnamon stick

    Wash the oranges, slice two into rounds. Halve the remaining oranges and squeeze out the juice. Mix the orange juice with the zest and measure 1250 ml. Peel and finely grate the ginger, add it to the mixture.

    Combine everything with the sugar and spices and bring to a boil while stirring constantly. Let it bubble for 4 minutes, remove the spices, then fill prepared jars to the brim, seal tightly, and let cool.
