Kirsch-Macarons

Ingredients
- 100 g cherries
- 270 g powdered sugar
- 4 egg whites
- 2 tsp lemon juice
- 200 g ground almonds
- red food coloring
- 5 amarettini
- 100 g dark chocolate couverture
- 2 Tbsp whipping cream
- 20 g butter

Wash the cherries, pat dry, halve, pit and puree. Strain the cherry purée through a fine sieve and mix well with 2 tbsp powdered sugar.

Beat the egg whites with lemon juice until stiff peaks form; gradually fold in the remaining powdered sugar until glossy. Gently fold in the almonds and cherry purée, color to desired hue with food coloring, and sift amarettini into fine crumbs using a rolling pin in a freezer bag.

Preheat oven to 150°C fan. Line a baking tray with parchment paper. Fill a piping bag with large round tip and pipe small half‑balls (~2 cm) onto the tray. Bake for about 25 minutes, leaving the oven door slightly ajar (e.g., insert a wooden spoon). After ~15 minutes sprinkle amarettini crumbs and finish baking. Remove and cool.

Melt the chocolate couverture over a double boiler. Whisk in cream and butter until smooth.

Spread a thin layer of chocolate ganache on one macaron, top with another, let set, then serve.
