Kirchweih Noodles

- 0.5 cube fresh yeast (21 g)
- 2 tbsp sugar
- 0.25 l lukewarm milk
- 500 g flour
- 2 Eggs
- 1 pinch salt
- 1 tsp grated lemon zest
- 200 g clarified butter
- flour (for the work surface)

Crush the yeast in a cup and mix with 1 tsp sugar and 3 tbsp lukewarm milk. Sift flour into a bowl, make a well in the center, pour in the yeast mixture, dust with a little flour on top and cover for 15 minutes to rise. Add remaining milk, sugar, eggs, salt and lemon zest, stir in and knead into a smooth dough. Cover and let rise for 1 hour.

Dust the work surface with flour and shape 12 small balls from the dough with floured hands. Cover with a kitchen towel and let rest another 10 minutes. In a wide heavy pan heat clarified butter in portions. Flatten the dough balls, stretch them thin in the middle so that the edges form thick bulges.
