Apple Fritters

- 500 g flour
- 1 cube yeast (42 g)
- 0.25 l lukewarm milk
- 1 egg
- 2 egg yolks
- 4 tbsp apple syrup
- Salt
- 50 g butter
- 75 g raisins
- Calvados
- butter fat (for frying)

Sift the flour into a bowl, press a well in the center and crumble the yeast into it. With a little milk and flour from the rim stir to make a pre‑starter, cover and let rise for 15 minutes. Add the remaining milk with apple syrup, egg, yolk and a pinch of salt. Sprinkle butter pieces over the mixture and knead everything into a smooth dough until it starts bubbling; if needed add a bit more flour. Cover with a cloth and let rise for another 30 minutes.

Wash raisins in hot water, pat dry and coat them with Calvados. Heat frying fat to 170 °C. Knead the dough again and fold in the raisins. Shape small dumplings with two spoons and fry portions until golden brown, then drain on kitchen paper.
