Fried Yeast Pastry

Ingredients
- 450 g flour
- 1 packet dry yeast (7 g)
- 2 tbsp sugar
- 200 ml lukewarm milk
- 2 Eggs
- 0.5 tsp Salt
- 1 tsp untreated lemon zest
- flour (for the work surface)
- vegetable oil (for frying)
- powdered sugar (for dusting)

Combine flour, yeast and sugar in a bowl. Add milk, eggs, salt and lemon zest; knead thoroughly until the dough releases from the bowl edges (about 10 minutes). Adjust consistency with more flour or milk if needed. Cover and let rest for at least 1 hour.

Dust a work surface with flour. Divide the dough in half and roll each into strands about 2 cm thick. Cut into pieces roughly 10 cm long, shape slightly round. Let rest on floured surface covered for another 20 minutes.

Heat oil to about 5 cm depth in a wide pot. Test temperature by dipping a wooden spoon; if small bubbles form at the handle, the oil is ready. Slide dough strands into hot oil with a slotted spoon and fry portions until golden‑yellow on both sides. Drain on a rack lined with paper towels. Dust with powdered sugar before serving.
