Ingredients

  • 500 g flour
  • 42 g yeast (1 cube)
  • 200 g lukewarm milk
  • 50 g sugar
  • 5 egg yolks
  • 60 g soft butter
  • 1 pinch salt
  • 1 tsp grated lemon zest
  • flour (for dusting the surface)
  • jam of choice for filling (without pieces)
  • 1.5 l fat for frying
  • powdered sugar for dusting
  • mint for garnish

Instructions

    Dissolve yeast and sugar in milk, then mix with flour, egg yolks, butter, salt and lemon zest using a dough hook until a soft dough forms; knead until the dough releases from the bowl. Cover and let rise in a warm place until doubled.

    Knead the dough on a floured surface, divide into two, roll into ropes, cut each rope into six equal pieces, shape into balls and let rest for about 30 minutes. Place the risen dough portions, seam side down, into hot fat (~180 °C) and fry; flip when one side turns brown.

    Remove the doughnuts with a slotted spoon, drain on paper towels, let cool slightly and inject jam using a pastry bag with a long thin nozzle or a cake sprayer.

    Dust with powdered sugar, arrange on plates with mint garnish and serve.
