Ketchup

Ingredients
- 700 g tomatoes
- 100 g sun-dried tomatoes (in oil)
- 1 onion
- 2 Garlic cloves
- 1 red bell pepper
- 4 allspice berries
- 1 bay leaf
- 1 clove of nutmeg
- 0.5 stick cinnamon
- 4 tbsp brown sugar
- 1 tsp mustard powder
- 100 ml wine vinegar
- Salt
- Cayenne pepper

Wash the tomatoes, remove the stem ends and roughly dice them. Drain the sun-dried tomatoes and reserve the oil. Peel the onion and garlic. Dice the onion and slice the garlic. Wash the bell pepper, halve it, deseed and dice. Place allspice, crushed bay leaf, nutmeg clove and cinnamon in a muslin cloth or spice sachet and seal.

Sauté the onion, garlic and bell pepper in 2 tbsp hot tomato oil and add the tomatoes and sun-dried tomatoes. Add the spice sachet and simmer for about 15 minutes. Then stir in the sugar, mustard powder and vinegar. Simmer another 10-15 minutes until thickened. Remove the spice sachet, blend into a fine ketchup and season with salt and cayenne pepper.

Fill into jars or bottles as desired, seal tightly and store in the refrigerator.
