Ingredients

  • 800 g tomatoes
  • 1 onion
  • 2 Garlic cloves
  • 1 red bell pepper
  • 2 tbsp olive oil
  • 4 allspice berries
  • 1 bay leaf
  • 1 clove of mace
  • 2 sprigs parsley
  • 1 sprig lovage
  • 4 tbsp brown sugar
  • 1 tsp mustard powder
  • 100 ml wine vinegar
  • salt to taste
  • cayenne pepper to taste

Instructions

    Wash the tomatoes, remove the stem ends and dice them. Peel and dice the onion and garlic cloves as well. Wash the bell pepper, halve it, deseed and dice.

    Sauté the onion, garlic and bell pepper in hot oil, add allspice, bay leaf and mace briefly, then add the tomatoes. Simmer for about 15 minutes. Then stir in the herbs, brown sugar, mustard powder and vinegar. Let it thicken to a creamy consistency for another 10-15 minutes. Pass through a sieve, bring to a boil again and season with salt and cayenne pepper. Transfer into a prepared bottle, seal well and let cool.
