Ingredients
- 3 Sharon fruits (kakis or similar)
- 2 tbsp lemon juice
- 1 fresh egg white
- 50 g whipping cream
- 1 packet vanilla sugar
- 1 tbsp unsalted pistachio nuts (chopped)
- Lemon balm
Instructions

Slice the kakis or Sharon fruits crosswise, scoop out the flesh with a spoon and finely puree it with the lemon juice.

Beat the egg white until stiff. Whip the cream with vanilla sugar until stiff. Remove about 1 tbsp of the whipped cream and set aside cold. Fold the remaining whipped cream and the beaten egg whites into the fruit puree in turns.

Fill glasses with the kaki cream, cover and chill for about 1 hour to set.

When serving, top the chilled mousse with a dollop of the reserved whipped cream and garnish with chopped pistachios and lemon balm leaves.
