Ingredients
- 200 ml lovely white wine
- 200 ml clear apple juice
- 1 lemon (juice)
- 0.5 cinnamon stick
- 0.5 Vanilla pod
- 1 cardamom pod
- 600 g strawberries
- 0.25 tsp agar-agar

Bring the wine, apple juice, lemon juice, cinnamon, split vanilla pod and squeezed cardamom pod to a boil. Let it steep on low heat for about 10 minutes.

Wash, trim, cut the strawberries into pieces and place them in a bowl.

Whisk 2 tbsp cold water with agar-agar and stir into the liquid. Simmer for about 2 minutes, then strain over the strawberries through a fine sieve. Mix well and cool. Chill for at least 2 hours before serving. The chilled soup should be only slightly thickened; add a little more cold water if needed.
