Ingredients

  • 300 g Strawberries
  • 2 tsp vanilla powder
  • 100 g spelt whole‑grain flour
  • Salt
  • 50 ml milk (3.5 % fat)
  • 6 Eggs
  • 1 tbsp butter
  • 30 g Raisins
  • 1 tbsp liquid honey
  • a handful mint

Instructions

  1. 1.

Wash, clean and halve the strawberries, setting aside a handful for garnish. Heat the remaining strawberries in a pot with a splash of water over medium heat until soft, about 15 minutes. Add 1 tsp vanilla powder and set aside.

  2. 2.

Meanwhile, mix the flour with a pinch of salt and the remaining vanilla powder; whisk in the milk, then add the eggs and blend into a smooth batter using a hand mixer.

  3. 3.

Heat butter in a skillet. Pour in the batter and sprinkle raisins on top. Cook covered over medium heat for 3–5 minutes until set. Carefully flip the batter and cook another 2–3 minutes to finish.

  4. 4.

Break the Kaiserschmarrn into pieces with two spatulas, drizzle with honey, then before serving spoon strawberries, strawberry sauce, and mint leaves over the dish.
