Juicy Apple Walnut Bread

This juicy apple bread with walnuts tastes wonderfully fruity and is made without added sugar! Instead honey and vanilla provide a delightful flavor experience!

Ingredients

  • 200 g walnut kernels
  • 2 small apples (tart)
  • 1 EL lemon juice
  • 200 g soft butter
  • 3 eggs
  • 150 g forest honey
  • 1 vanilla bean (filling)
  • 200 g Flour
  • 1 packet baking powder

Instructions

    Preheat the oven to 160°C fan-forced. Set aside about 10 walnut halves for decoration and roughly chop the remaining walnuts.

    Peel, quarter, core, and grate the apples; mix immediately with lemon juice. Cream the butter and gradually fold in eggs, honey, and vanilla filling. Mix flour with baking powder and chopped walnuts, then stir into the batter before adding the apples.

    Pour the dough into a greased and floured loaf pan. Bake in the preheated oven for about 60 minutes (check with a toothpick). If the cake darkens too quickly, cover it with foil promptly.

    Remove and let cool slightly, then transfer to a wire rack and allow to cool completely.

    Whisk powdered sugar with lemon juice and, if needed, a little water into a thick glaze; brush over the cake. Roughly chop remaining walnuts and scatter on top of the glaze, letting them dry.
