Ingredients
- 200 g walnuts
- 200 g carrots
- 200 ml honey
- 2 Eggs
- 80 g Butter
- 1 tsp Baking Soda
- 1 tsp cinnamon
- 1 tsp vanilla extract (unsweetened)
- a pinch of salt
- 50 g Raisins
- fat (for greasing the pan)
Instructions

Grind 150 g of the walnuts, chop the rest coarsely. Wash, peel and finely grate the carrots. Mix honey, eggs, and butter together. Stir in ground walnuts, baking soda, cinnamon, vanilla extract, and salt.

Add the grated carrots, raisins, and chopped walnuts. Pour batter into a greased loaf pan and bake at 180°C for about 50 minutes.
