Jam-Filled Pastry

Ingredients
- 300 g lard
- 1 kg flour
- 3 egg yolks
- 120 g powdered sugar
- 1 packet vanilla sugar
- 80 ml orange juice
- 250 g apricot jam
- powdered sugar (for dusting)

Slowly melt the lard and let it cool slightly. Put 2/3 of the flour into a bowl, form a well. Beat the egg yolks with the sugar, vanilla sugar, and orange juice, then pour into the well.

Pour the lard over the mixture and knead everything together. Add the remaining flour and about 100 ml lukewarm water, kneading by hand until a smooth dough forms. Cover the dough and let it rest for about 30 minutes.

Roll the dough thin on a lightly floured surface and cut out about 25 circles of roughly 14 cm diameter. Spoon 1 tablespoon of jam into each center, fold the dough over once, and press the edges together with a fork.

Knead any remaining dough again, roll it not too thin, and cut out additional shapes as desired. Place all on a parchment-lined baking sheet and bake in a preheated oven at 180°C for about 40 minutes (remove earlier if needed). Let cool on a rack and dust with powdered sugar before serving.
