Indian-Style Meatballs

Ingredients
- 500 g ground beef
- 1 shallot (finely chopped)
- 2 stale rolls
- milk
- 1 egg
- 2 tbsp chopped parsley
- 0.5 tsp Salt
- pepper (ground)
- clarified butter
- 1 kg ripe tomatoes
- 2 shallots
- 2 Garlic cloves
- 3 tbsp olive oil
- 1 tbsp Tomato Paste
- 1 tbsp Garam Masala
- 1 tbsp Indian curry powder
- 1 tsp thyme
- 1 tbsp chopped parsley
- Salt
- Pepper

Instructions

Score the tomatoes, blanch them in boiling water, let sit briefly, then peel. Dice the flesh without seeds or stems.

Peel and dice the shallots; crush the garlic cloves. Sauté both in olive oil. Add garam masala, curry powder, and tomato paste, cooking for 2–3 minutes.

Add tomatoes to the shallot mixture and simmer, stirring occasionally, until thickened over about 30 minutes.

Season the sauce with finely chopped basil leaves, remaining thyme leaves, salt, and pepper.

Sauté the shallot in hot clarified butter until translucent. Soak the stale roll in milk, squeeze out excess liquid, then combine with the sautéed shallots, egg, parsley, salt, and pepper. Mix well. With damp hands form small balls and fry them in hot clarified butter until golden brown on all sides.

Serve the meatballs in the tomato sauce, adding sour cream to taste if desired. Serve hot and enjoy.
