Greek Meatballs in Tomato Sauce

Ingredients

  • 1 stale roll
  • 1 egg
  • 500 g mixed ground beef
  • 2 tbsp freshly chopped parsley
  • Salt
  • black pepper (ground)
  • 2 tbsp olive oil
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp Tomato paste
  • 800 g canned diced tomatoes
  • 2 tbsp fresh oregano
  • 2 tbsp ajvar
  • Salt
  • a pinch of sugar
  • black pepper (ground)

Instructions

    Soak the roll in lukewarm water. Add the egg to the ground beef. Tear out the soaked roll, add it and the parsley. Season with salt and pepper. Knead the mixture thoroughly and form small balls with slightly damp hands.

    Peel and finely dice the onion and garlic. Sauté them until translucent in a hot pan with oil. Stir in the tomato paste. Add the tomatoes and let the sauce simmer gently for about 15 minutes.

    Brown the meatballs in a hot, non‑stick pan with oil for 3–4 minutes on each side.

    Add oregano to the sauce and season with ajvar, salt, sugar, and pepper. Place the meatballs into the sauce and cook for a few more minutes until juicy. Serve the Greek meatballs in tomato sauce.
