Indian flatbread (Chapati) from Spoonsparrow, an Indian classic cooked in a pan, is always delicious.
Ingredients
- 300 g spelt whole‑grain flour
- 1 tsp salt
- 15 g ghee (clarified butter; 3 tsp)

Mix flour, salt, 2 tsp ghee and 175 ml lukewarm water in a bowl and knead until a smooth dough forms. Add more water as needed. Divide the dough into 12 equal pieces, shape into balls, return to the bowl, cover and rest for 30 minutes.

Roll each dough ball thinly. Heat a skillet with a little ghee, cook the flatbreads over medium heat for about 1–2 minutes per side until golden brown, then serve.
