Iced Tea Drink
Delicious as a non‑alcoholic aperitif: try the Spoonsparrow recipe for iced tea drink and refresh yourself.
Ingredients
- 8 mint leaves
- 2 tsp loose black tea leaves
- 60 ml lime juice
- 4 tbsp crystallized sugar (kandis)
- 32 lemon ice cubes (made from 5 cl lime and lemon juice each plus 4 cl simple syrup)
- 80 ml cloudy apple juice
- ice‑cold sparkling mineral water
- mint sprig for garnish
Instructions

Wash the mint leaves, pat dry, and place them with the tea leaves in a tea bag. Pour 350 ml water, lime juice, and crystallized sugar into a small pot and bring to a boil once. Add the tea bag and simmer gently over medium heat for 5 minutes. Remove the tea bag, then let the syrup reduce for another 20 minutes. Take off the heat and allow it to cool completely.

Mix the lime and lemon juices with simple syrup and 400 ml water, pour into two ice cube trays or molds. Freeze in the freezer for 12 hours.

Crush three‑quarters of the lemon ice cubes in a blender and distribute over glasses. Pour 5 cl tea syrup and 4 cl apple juice on top. Add 2–3 mint leaves to each glass and fill with sparkling mineral water. Serve the iced tea drink garnished with ice cubes, mint, and a sprinkle of crystallized sugar. Stir once before drinking.
