Chicken Burger with Satay Sauce

- 3 chicken breast fillets
- 0.5 bunch coriander
- 1 egg
- bread crumbs
- Salt
- ground pepper (from grinder)
- oil (for frying)
- 40 g salad leaves (e.g., lettuce)
- 40 g thin cucumber slices
- 4 burger buns
- 50 g finely ground peanut butter
- 40 ml Coconut milk
- 40 ml vegetable broth
- light soy sauce
- 1 tsp oyster sauce
- Salt
- spicy chili powder

1) Prepare the sauce

Combine all satay sauce ingredients in a pot, mix together and gently heat for about 5 minutes, letting it simmer quietly, adjust with soy sauce to taste.

2) Make patties

Wash chicken breasts, pat dry and grind through a meat grinder.

Wash coriander, pat dry and finely chop. Mix with chicken and egg, add enough bread crumbs until a well-formed dough forms. Season with salt and pepper. Shape into four patties and fry in hot oil for about 2 minutes per side. Drain on kitchen paper.

Halve the buns.

Place lettuce and cucumber slices on the bottom bun halves. Top with chicken patties, add a dollop of satay sauce on each, then close with the top bun. Serve remaining sauce on the side.
