Homemade Giotto

Ingredients

  • 200 g nougat
  • 150 ml whipping cream
  • 300 g dark chocolate couverture
  • 250 g chopped hazelnuts
  • 1 g hollow chestnut
  • 400 g milk chocolate couverture

Instructions

    Bring the cream to a boil in a pot. Cut the dark chocolate into pieces and place it with the nougat in a bowl. Remove the cream from heat and stir the mixture until melted. Let the mass cool slightly and cover for at least 4 hours in the refrigerator.

    Meanwhile, roast the chopped hazelnuts in a pan over low to medium heat until golden brown. Place the chestnuts in a freezer bag and crush them into crumbs. Mix with the nuts.

    Chop the chocolate couverture and melt it over a double boiler. Using a teaspoon, scoop portions of the nougat cream and shape them into balls with your hands. Dip each ball in the dark chocolate glaze with a pralin fork, let excess drip off, then roll in the toasted hazelnut mixture. Place on parchment paper and allow to set.
