Ingredients
- 100 g spelt whole‑grain flour
- 50 g ground almonds
- 1 tsp Baking powder
- 5 tbsp liquid honey
- 1 pinch salt
- 50 g butter
- 60 ml whipping cream
- 400 g mixed berries (black and red currants, raspberries, black and red gooseberries)
- 2 tbsp Cornstarch
- 2 small apples
- 1 vanilla pod

Combine flour with almonds, baking powder and salt in a bowl. Cut butter into pieces, add 3 tbsp honey and work into crumbs with fingers. Quickly fold in cream until a slightly sticky dough forms.

Wash berries if needed, pat dry. Mix with cornstarch and extracted vanilla seed. Pour into a greased baking dish. Peel apples, core them and slice into rings. Arrange over berries, drizzle remaining honey on top. Dot the dough in small heaps over everything. Bake in preheated oven at 200 °C (180 °C fan) for about 30 minutes until golden brown.

Remove from oven and serve sprinkled with powdered sugar and orange zest if desired.
