Homemade Apple Cider Vinegar

- 2 l apple cider (unsulfured or low-sulfur)
- 200 ml starter culture (available at specialty stores)

Add the starter culture to the cider and pour the mixture into bottles. Cover the bottles with cotton, securing it with a rubber ring. Place the bottles in a warm spot (25-30°C) and stir them several times daily to ensure good oxygen flow.

After 1-2 weeks a thin film will form on the surface (stinky like glue). After a few more weeks unfiltered vinegar has formed. Taste to determine the optimal time for bottling. Then filter the vinegar, transfer it to new bottles, and seal again with a cotton cover. Store the vinegar in a cool, dark place. After 2-3 months the vinegar will mature. At that point it can be transferred into sealed bottles.
