Ingredients

  • 1 romaine lettuce
  • 1 small radicchio
  • 2 stalks celery
  • 1 onion
  • 2 yellow bell peppers
  • 250 g sauerkraut
  • 3 tbsp apple cider vinegar
  • 4 tbsp Vegetable oil
  • Salt
  • Pepper (freshly ground)
  • 8 pickled herring fillets
  • 150 g Sour cream
  • 50 ml heavy cream
  • 50 g sour cream
  • 1 bunch chives

Instructions

    Wash the romaine and radicchio, tear into bite‑size pieces. Clean and slice the celery finely. Peel and dice the onion finely. Halve the bell peppers, remove seeds, wash and dice small. Mix sauerkraut with pepper, celery and onion.

    Arrange salad leaves on plates, place sauerkraut mixture in the center. Whisk vinegar, oil, salt and pepper together and drizzle over. Cut fish into strips. For the sauce whisk sour cream with heavy cream and crème fraîche. Slice chives into ribbons, fold in, season with salt and pepper. Add fish to salad, pour sauce over and serve.
