Herring Salad
Fresh herring salad featuring crisp potatoes, green beans, apples and a tangy vinaigrette. Try this and other recipes from Spoonsparrow!
Ingredients
- 500 g Potatoes
- 400 g Green Beans
- Salt
- Pepper (freshly ground)
- 1 Shallot
- 2 Apples
- Lemon juice
- 8 Bismarck herring fillets
- 3 tbsp white wine vinegar
- 3 tbsp vegetable broth
- 5 tbsp Rapeseed Oil
- 0.5 tsp Sugar
- 0.5 tsp mustard
- dill sprigs (for garnish)
Instructions

Wash potatoes and cook with skins in salted water for about 20 minutes, drain, cool, peel, and halve.

Rinse beans, trim ends, cut diagonally into 3 cm pieces, boil in salted water for about 10 minutes, drain, cool, and let drain.

Peel shallot and slice thinly. Wash apples, quarter them, remove cores, and slice thinly; mix immediately with lemon juice.

Rinse herring fillets briefly under cold water, pat dry, and cut into ~3 cm pieces.

Whisk vinegar, vegetable broth, salt, pepper, sugar, mustard, and oil together; taste. Toss all ingredients gently in a bowl with the dressing. Plate the salad and garnish with dill sprigs before serving.
