Ingredients

  • 100 g shrimp (pre‑cooked)
  • 100 g crab meat (pickled)
  • 1 baby pineapple
  • 1 Shallot
  • 2 tbsp oil
  • 8 lettuce leaves
  • Salt
  • Cayenne pepper
  • 2 tbsp mayonnaise
  • 2 tbsp ketchup
  • spritz of lemon juice
  • 1 tbsp cognac
  • 0.5 tsp horseradish (jarred)

  • watercress (for garnish)

Instructions

    Wash and pat dry the shrimp and crab meat.

    Peel the pineapple with a sharp knife and slice into very thin rounds.

    Peel and finely chop the shallot.

    Wash, trim, and tear the lettuce leaves as needed.

    Whisk mayonnaise with ketchup, cognac, and horseradish. Season with salt, cayenne pepper, and lemon juice.

    Arrange lettuce leaves and pineapple slices on plates.

    Wash, trim, and pat dry the watercress.

    Sauté shallot cubes in hot oil, briefly cook shrimp and crab meat, season with salt and cayenne pepper, then spoon over the salad. Drizzle dressing and serve immediately garnished with watercress.
