Ingredients

  • 1 Avocado
  • 1 baby pineapple
  • 1 red small onion
  • 3 tbsp Pimpinelle
  • juice of 1 lemon
  • 2 tbsp honey
  • 3 tbsp olive oil
  • 80 g field salad
  • Salt
  • pepper (ground)

Instructions

    Peel the avocado, remove the pit and slice into thin strips. For the baby pineapple cut off the stem and flower bud, place the fruit on a cutting board, peel from top to bottom with a knife, quarter it, remove the hard core, then cut into bite‑sized pieces.

    Trim the onion, halve it and slice finely. Rinse the field salad, wash well and drain. Whisk lemon juice with honey and olive oil, season with salt and pepper. Toss the field salad, Pimpinelle, pineapple and avocado together and let marinate. Plate the salad in a bowl, garnish with onion rings and a sprinkle of ground pepper.
