Colorful Pear Salad

Ingredients

  • 150 g arugula
  • 1 cucumber
  • 100 g radishes
  • 2 Spring Onions
  • 1 handful coriander leaves
  • 2 pears
  • 4 tbsp rapeseed oil
  • 4 tbsp apple cider vinegar
  • 1 tsp pear juice concentrate
  • 1 tsp lemon juice
  • Salt
  • Pepper (freshly ground)
  • edible flowers for garnish (e.g., nasturtium and marigold)

Instructions

    Wash, trim, and dry the arugula; tear into bite‑sized pieces as needed. Wash the cucumber, halve lengthwise, deseed, and slice thin or shave. Wash radishes, trim ends, halve large ones, leave small whole, and slice thinly. Wash spring onions, trim, and cut into 5–6 cm strips. Rinse coriander leaves, shake dry, and pluck individual leaves.

    Wash pears, halve, remove cores, and cut halves into wedges. Brush with a little oil and grill on a hot grill for 6‑8 minutes.

    Whisk vinegar with pear juice concentrate, lemon juice, and remaining oil; season with salt and pepper to taste.

    Season pears lightly with pepper and arrange on plates. Combine prepared salad ingredients and top the pears. Drizzle dressing over the salad and garnish with picked edible flowers before serving.
