Ingredients

  • 400 g penne
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 Red Onion
  • 5 tbsp olive oil
  • Salt
  • pepper (ground)
  • 2 tbsp balsamic vinegar
  • Basil

Instructions

    Cook the pasta in plenty of salted water until al dente, drain, reserving 1 cup of cooking liquid.

    Clean and seed the bell peppers, then slice into strips.

    Peel the onion and cut it lengthwise into thin slivers.

    Sauté the peppers and onions in hot olive oil until just tender, seasoning with balsamic vinegar, salt, and pepper.

    Combine the pasta with the vegetables, adding a splash of reserved cooking liquid if needed. Plate and sprinkle with basil leaves before serving.
