Heringsgratin mit Tomaten

Ingredients
- 400 g herring fillet (with skin, boneless)
- Salt
- black pepper (freshly ground)
- 1 tsp chopped dill sprigs
- 1 tsp chopped parsley
- 1 tsp chives rings
- 2 tbsp mustard
- 125 g whipping cream
- 100 g feta cheese
- 2 Tbsp grated Parmesan
- 100 g black olives (pitted)
- 125 g cocktail tomatoes
- fresh thyme leaves (for garnish)
- fat (for greasing the dish)
Instructions

Slice the olives into rounds. Wash the tomatoes, pat dry and halve them.

Rinse the herring fillets briefly under running cold water and pat dry. Cut the fillets at an angle into 3 cm wide strips and place them side by side in a greased baking dish. Season with salt and pepper.

Mix herbs, mustard and cream together and spread over the herring strips. Place the dish in a preheated oven (200°C) and bake for about 15 minutes until the surface is lightly browned.

Remove from the oven, arrange tomatoes and olives on top, crumble feta and sprinkle parmesan over them.

Return to the oven and gratinate for another 10 minutes. Serve sprinkled with thyme in the dish.
