Ingredients

  • 1 onion
  • 1 Garlic clove
  • 1 tbsp butter
  • 800 g waxy potatoes
  • 2 leeks
  • Salt
  • 75 g chopped hazelnuts
  • 200 g soft cheese (e.g., Reblochon)
  • pepper (ground)
  • Nutmeg (freshly grated)
  • 200 ml whipping cream
  • 200 ml milk
  • 2 Eggs

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat.

    Peel and finely dice the onion and garlic, then sauté in hot butter until translucent. Peel, wash, and slice or shave the potatoes thinly. Clean, wash, and cut the leeks into rings; blanch in boiling salted water for about 2 minutes, cool, and drain well.

    Remove rind from cheese, cube it, and mix with the potatoes, leeks, and nuts. Season with salt, pepper, and nutmeg, then distribute into four oven-safe ramekins.

    Whisk together cream, onion-garlic mixture, milk, and eggs; pour over the layered ingredients.
