Ingredients

  • 6 Eggs
  • 6 tbsp whipping cream
  • Salt
  • Pepper (freshly ground)
  • oil
  • 1 packet watercress
  • 1 bunch chives
  • 0.5 bunch Parsley
  • 1 sprig lovage

Instructions

    Tear the lovage, chop the parsley, cut the chives into rings and trim the watercress with scissors.

    Beat the eggs with cream and seasonings. Heat oil in a large pan and pour a thin layer of the egg mixture into the pan.

    Reduce heat and scatter the herbs over the top of the omelette. Wait briefly until the egg is fully set.

    Slide the finished omelette out of the pan, roll it so that the herb side faces inward, cut into 5 cm diagonal pieces with a knife, and secure them together with toothpicks.
