Ingredients
- 1 small stalk of leek
- 1 clove garlic
- 4 medium-sized peeled potatoes (from the day before)
- 6 Eggs
- 200 ml milk
- Salt
- Pepper
- 3 sprigs of thyme
- 1 tbsp butter
- 1 tbsp Vegetable oil

Clean, wash and slice the leek into rounds. Peel and mince the garlic. Peel the potatoes and cut them into thin slices. Whisk the eggs with the milk, salt and pepper. Rinse the thyme and shake it dry. Set aside a few thyme leaves for garnish, strip the remaining leaves from the stems and chop them. Add the chopped thyme to the egg mixture.

Heat butter and oil in a wide non-stick pan. Sauté the garlic, potato and leek slices over medium heat, seasoning with salt and pepper. Pour the egg mixture over them, spreading the slices evenly in the pan. Cover and cook on low heat for 20-25 minutes until set. Carefully lift the farmer’s omelette from the pan, slide it onto a plate, cut into quarters and serve garnished with the remaining thyme.
