Ingredients
- 1 onion
- 400 g cooked potatoes
- 200 g corned beef
- 2 tbsp butter
- 2 tbsp freshly chopped parsley
- 5 eggs
- Salt
- Pepper (freshly ground)
- arugula (for garnish)
Instructions

Peel and finely dice the onion. Peel the potatoes and cut them into pieces. Cut the corned beef into small cubes as well.

Brown the potato pieces lightly in hot butter. Add the diced onion and sauté for 1-2 minutes. Mix in the corned beef.

Whisk the eggs with parsley, salt, and pepper, then pour over the potatoes. Cover and cook gently for about 5 minutes until set.

Use a plate to flip the omelette and brown the other side for a few more minutes.

Serve in portions and garnish with arugula as desired.
