Vegetable Omelette with Sausage

A fresh vegetable omelette featuring sliced sausage, perfect for a quick breakfast or light lunch by Spoonsparrow!
Ingredients
- 1 onion (diced)
- 1 yellow bell pepper
- 2 tbsp olive oil
- 150 g salami (or spicy smoked paprika sausage)
- 8 eggs
- 2 tbsp heavy cream
- Salt
- paprika powder
- 2 tbsp chopped parsley
- 8 cherry tomatoes (halved)
- parsley sprigs
- 100 g hard cheese (thinly sliced)
- 4 green peppers
- 2 tbsp olive oil
- 1 tsp curry powder
- 0.5 lemon juice
Instructions

Wash the bell pepper, quarter it, remove seeds and dice.

Whisk eggs with heavy cream, salt, and paprika powder.

In a hot pan or four small pans, sauté diced onion and sliced sausage until desired crispness; add bell pepper cubes briefly, then pour in egg mixture.

Bake in preheated oven at 180°C fan for about 10 minutes on the lower rack.

Sprinkle curry powder, then arrange cheese strips, cherry tomatoes, and parsley sprigs over the omelettes; drizzle with olive oil and lemon juice. Garnish with chopped parsley before serving.
