Ingredients
- 4 large eggs
- Salt
- Pepper (freshly ground)
- 2 tbsp grated cheese
- 4 tbsp chopped herbs of choice (dill, chervil, parsley, chives...)
- 2 tbsp butter
- 2 Tomatoes
- parsley (for garnish)
Instructions

Separate the eggs; whisk yolks with salt, pepper, cheese and herbs.

Beat egg whites until very stiff and fold into the yolk mixture.

Heat butter in a pan, pour in the egg mixture, cover with a lid, then cook over low heat until the top is just set. (If using gas, use a burner rack.)

Fold the omelette onto a preheated plate, garnish with tomato slices and parsley, and serve.
