Ingredients

  • 4 eggs
  • 20 g Parmesan (freshly grated)
  • Salt
  • pepper (ground)
  • 200 g Cherry tomatoes
  • 1 ball mozzarella
  • 1 tbsp butter
  • Basil

Instructions

    Whisk eggs with Parmesan, salt and pepper.

    Halve the tomatoes.

  3. 3.

    Slice the mozzarella into rounds.

  4. 4.

    Heat butter in a pan, pour in egg mixture, place tomatoes cut side up on top and distribute mozzarella slices over them.

    Cover and cook over low heat until the egg is set and cheese has melted. Sprinkle with basil.
