  • mayonnaise
  • Salt
  • pepper (from the mill)
  • paprika powder
  • spicy mustard
  • balsamic vinegar
  • Lemon juice

Instructions

  1. 1.

Hard boil the eggs and shock them in cold water. Dry the eggs and cut off a small cap from each top.

  2. 2.

Using a teaspoon, remove only the yolk from two eggs and mix with 2 tsp of mustard. Season with salt and pepper. Add a few drops of balsamic vinegar to each egg, then return the mustard‑yolk mixture. Garnish with paprika powder and cress.

  3. 3.

With a teaspoon, carefully scoop out both yolk and white from two eggs and finely chop. Mix with 2 tsp mayonnaise, some cress, plenty of paprika powder, salt, and pepper. Return the mixture to the shells. Place the eggs in egg cups and decorate with shrimp as desired.

  4. 4.

From two eggs, gently remove yolk and white with a teaspoon and finely chop. Dice 1 or 1/2 slice of smoked salmon. Mix egg, salmon, 2 tsp mayonnaise, and 2 tsp lemon juice. Season with salt and pepper. Refill the shells, place in egg cups, and garnish with salmon and cress.

  5. 5.

From two eggs, gently remove yolk and white with a teaspoon and finely chop. Season with salt and pepper. Add 1 tsp mayonnaise, 1 tsp smoked salmon caviar, and cress. Mix into the shells and fill with salmon caviar. Garnish with cress.
