Zucchini Lemon Sauce with Feta

The zucchini‑lemon sauce with feta from Spoonsparrow is ready in just 20 minutes and tastes fresh and aromatic.
Ingredients
- 1 Shallot
- 1 Garlic clove
- 2 zucchinis
- 1 Organic lemon
- 1 tbsp Olive Oil
- 200 g cooking cream
- 1 potato
- Salt
- Pepper
- 0.25 tsp Dried thyme
- 100 g feta (45% fat in whole milk)

Peel and chop the shallot and garlic. Clean, wash, and dice the zucchinis into small cubes. Peel the lemon hot, grate it dry, zest the peel, and squeeze out the juice.

Heat olive oil in a pot. Sauté the shallot and garlic for 3 minutes over medium heat. Add the zucchini cubes and sauté for 5 minutes. Peel, wash, and grate the potato, then add it with the cream to the pot and simmer for 5 minutes over low heat.

Season the sauce with salt, pepper, thyme, lemon juice, and zest. Crumble the feta and stir into the zucchini‑lemon sauce.
