Christmas dessert: Heidesand is perfect for gifting, bringing along, and snacking.

Ingredients

  • 150 g butter
  • 100 g powdered sugar
  • 1 tsp salt
  • 1 Vanilla bean
  • 1 tsp grated lemon zest
  • 200 g spelt flour (type 405)
  • 2 tbsp milk (1.5% fat)

Instructions

    Slowly melt the butter in a pot over low heat, letting it brown slightly. Allow to cool in a bowl.

    Whisk together the butter, powdered sugar, salt, vanilla bean, and lemon zest until creamy. Add spelt flour and milk, then knead with hand mixer attachments into a smooth dough.

    Shape the dough into two rolls about 3 cm in diameter, wrap each in cling film, and chill for 2 hours. Slice the rolls into approximately 7 mm thick rounds and place on baking sheets lined with parchment paper.

    Bake the Heidesand in a preheated oven at 180°C (fan 160°C; gas: level 2-3) for about 12–15 minutes. Remove from the oven and let cool.
